Le Basi a caldo PreGel prevedono un processo chiamato ‘pastorizzazione’. La pastorizzazione consiste in una prima fase di riscaldamento del latte nel pastorizzatore fino a 35-40°C; si aggiungono, poi, le parti solide e si completa la fase di riscaldamento.
Raggiunta la temperatura di 85°C circa, la miscela viene raffreddata e lasciata riposare nella macchina, completando così il processo di pastorizzazione. Successivamente, si preleva dal pastorizzatore la quantità di miscela liquida necessaria per produrre un gusto di Gelato, infine si procede con la mantecatura del Gelato.

Le Basi Frutta PreGel sono prodotti ideali per la preparazione di Gelato o Sorbetti alla frutta dalla struttura fresca oppure cremosa, a seconda delle esigenze di ogni singolo Gelatiere. Tutte le Basi Frutta vengono realizzate seguendo il procedimento a freddo, che non necessita di pastorizzazione. Dopo aver accuratamente mescolato insieme gli ingredienti a freddo, la miscela deve esser lasciata maturare per almeno 30 minuti in frigorifero prima di essere mantecata.
